Greek Salad


Recipe Notes:

Serves 4 people.

Takes about 15 minutes.

The trick with the Greek salad is to keep everything chunky.


Ingredients

4 servings

SALAD

4 Adelaide tomatoes, cut into chunky wedges

2 Lebanese cucumbers sliced whole

½ Red onion thinly sliced

16 Kalamata olives

100g Greek feta, cut into chunks

Capers (Optional)

DRESSING

3 tbsp extra virgin olive oil

1 Lemon, squeezed

1 tsp dried oregano

Pinch of salt

Instructions

  1. Add the tomatoes, cucumbers, onion, olives and capers (if you’re adding) in a bowl together.

  2. Add the dressing ingredients to a small bowl and whisk together.

  3. Just before serving, pour the dressing over the salad ingredients and mix together.

  4. Crumble the feta over the salad and serve.
