Oven Roasted Brussels Sprouts

Serves 2 people
Pair with a tahini sauce.
Ingredients
250g Brussels sprouts
2 garlic cloves
2 tbsp of extra virgin olive oil
15g butter
Pinch of salt
Instructions
Pre-heat the oven to 180°C.
Chop the ends of the Brussels sprouts and halve each sprout.
Halve each garlic but leave the peel on.
Heat up an oven safe pan over a medium to low heat (Preferably cast iron or ceramic).
Add olive oil and place Brussels sprouts cut side down and begin to brown. Add some salt and pepper at this stage as well.
Once the Brussels sprouts have some colour, give the pan a shake and add it to the oven. Cook for 10-15 mins. Check and shake the pan every 5 minutes.
Once the Brussels sprouts are cooked through, add butter and put back in the oven for a few minutes.
